Welcome to the Mexican Restaurants section of the USMCOCCA! The purpose of this page is to promote the Mexican Heritage through the most emblematic symbol of Mexican Culture, its food. The US-Mexico Chamber of Commerce California Chapter encourages Mexican Food Restaurateurs to use this platform to meet other individuals in the same industry. While also learning what some of its clientele has to say about their place. Creating a link to culture, business and US-Mexico relations. HISTORY OF MEXICAN FOOD

The history of Mexican cuisine has a long and delicious past. It began with the pre-Colonial diet that consisted largely on corn-based dishes with chiles and herbs, usually complemented with beans and tomatoes or nopales. The pre-Colonials also included in their diet chocolate, vanilla, tomatillos, avocado, guava, papaya, sapote, mamey, pineapple, soursop, jicama, squash, sweet potato, peanuts, achiote, huitlacoche, turkey and fish.

In the 1500s, while Spanish conquistadors were invading Mexico, they were able to introduce a variety of animals, including cattle, chickens, goats, sheep, and pigs. As well as vegetables and cereals like almonds, parsley, rice, wheat, barley and many spices. The imported Spanish cuisine was eventually incorporated into the indigenous cuisine, making it a unique and astonishing mix of flavors.

Today Mexican cuisine is known for its variety of flavors, colorful decoration, as well as spices and ingredients, many of which are native to the country. The cuisine of Mexico has evolved through the centuries blending indigenous and European elements ever since the 16th century. On November 2010, UNESCO added Mexican cuisine to the list of the world’s “intangible cultural heritages”.

Authentic Mexican Restaurant Awards 2010

In the Year 2010 the USMCO-CA and Sabres Unicos hosted the 2010 Award Ceremony of the Grand Finale of Sabores Autenticos de Mexico Grand Tour presented in Los Angeles California. Given by UNESCO’s distinction of Mexican Cuisine as Cultural Immaterial Heritage to Humanity.
